01 / ABOUT THE PLACE

About this place

A quick pass through simmering kelp dashi before dipping into house-made tsuyu broth is the hallmark of kuguri nabe, the signature hot pot that anchors a meal at Roppakuya. The restaurant takes its name from Kagoshima's prized Roppaku kurobuta pork, a breed whose loins and belly yield clean, delicate fat. A brief bath in the broth highlights the meat's natural sweetness and finely grained texture. The recommended rhythm begins simply, sampling the meat in broth accented with spring onion and a few drops of yuzu juice. As the meal progresses, adding yuzukosho or kuro-shichimi black seven-spice introduces deeper dimensions of heat and aroma. To finish the pot, thin konnyaku soba noodles are introduced, retaining their pleasantly slippery chew right through to the final bite.

Beyond the hot pot, the à la carte menu offers notable depth. Omi beef sourced directly from Ryuo Ranch in Shiga Prefecture appears as lightly seared tataki or marinated for a full week in sweet Saikyo miso, capturing both caramelized fragrance and tender richness. The pork selection extends far beyond the pot as well, from butawasa—sake-steamed kurobuta leg served with wasabi soy sauce—to kakuni pork belly stewed gently with dashi and shochu until meltingly tender. Seasonal seafood and produce balance the richer meats, with sashimi shipped straight from fishing ports, summertime pike conger dishes, and Kamogamo eggplant topped with two varieties of miso dengaku dressing the table with the flavors of the moment.

The drink list provides ample pairing options, centering on local Fushimi sake such as Sawayamatsumoto and Eikun, supported by authentic regional shochu, Japanese fruit liqueurs, and wine. Inside, private rooms and traditional tatami-mat spaces lend themselves to an unhurried, comfortable pace. For banquets or group dining, multi-course plans featuring kuguri nabe and seasonal sashimi are available with all-you-can-drink packages, making advance reservations well worth considering when planning an evening out in Karasuma.
